Serves – 2-4

2 tbsp ghee

1 large onion, thinly sliced

1 ½ tsp ginger garlic paste

1 cup tomatoes, chopped

1½ tsp cumin powder

1 tsp red chilli powder (degi mirch)

½ tsp garam masala

1½ tbsp coriander powder

1/4th cup water

200 gms boneless chicken tikka

Salt- to taste

½ cup fresh cream

¼ tsp dried fenugreek leaves (kasoori methi)

1/2 tbsp butter

Fresh coriander -for garnish

Heat the ghee in a heavy bottom pot over medium heat. Add the sliced onions and sauté until they turn translucent and start to sweat, about 5-7 minutes, don’t allow the onions to brown. Add ginger garlic paste and let it cook for 30 seconds. Stir well so it doesn’t burn. Add the chopped tomatoes, cumin powder, red chilli powder, garam masala, coriander powder and continue to cook for 5 mins. If the mixture starts bubbling rapidly, add about ¼ cup of water and continue to cook. Remove from heat, add the mixture to a blender and blend until smooth, you may or may not need a few tablespoons of water to help it blend. Add the blend back to the pan. Add the boneless chicken tikka and further simmer for 2-3 minutes. Add fresh cream, dried fenugreek leaves (kasoori methi) and mix well. Garnish with butter & fresh coriander. Serve hot with any Indian breads of your choice.
